Zucchini and Chicken Sausage Pancakes

These patties were incredibly flavorful and the chicken sausage from Trader Joe’s really made the dish tasty.
ZUCCHINI AND CHICKEN SAUSAGE PANCAKES
2 zucchini, grated and squeezed dry
2 chicken sausages, browned and crumbled
1 small red onion, finely chopped
3 T Parmesan cheese
1/4 cup fresh parsley, chopped
1/4 cup oat bran
2 eggs, beaten with a fork
salt and pepper
cooking spray
1/2 cup fat free Greek yogurt
1/4 cup fresh parsley, chopped
salt and pepper
Mix all the ingredients together til blended, adding the eggs at the very end. Making 8 pancakes out of the mixture, fry them in a bit of cooking spray over medium heat, about 5-6 minutes per side. Mix all the sauce ingredients together and refrigerate til ready to use. Serve over pancakes.
Chicken, Sausage, Peppers and Onions
1 chicken breast, pounded to 1/2-inch thick
2 turkey Italian sausages, casings removed
1/2 small onion, sliced
1/2 red bell pepper, sliced
1/4 cup kalamata olives (Consolidation)
1/2 cup Italian diced tomatoes
In a skillet, brown the chicken about 5 minutes per side, or until done. Remove from skillet and slice into 1/2-inch strips. In a bit of cooking spray, cook the sausage, onion and bell pepper until soft, about 6 minutes. Add the olives, tomatoes and chicken and cook another 5 minutes, or until warm. Season with salt, pepper and red pepper flakes.
Cauliflower Rice
1 teaspoon of "I Can't Believe its not Butter"
1 medium onion, diced
1 cup celery, finely diced
1 head cauliflower, trimmed and coarsely chopped
¼ teaspoon celtic sea salt
In a large skillet, heat I can't believe its not butter over medium heat Saute onion over medium heat for 10 minutes, until soft. Add celery to skillet and saute for 5 minutes. Meanwhile, place cauliflower in a food processor with the "S" blade and process until the texture of rice add cauliflower to skillet, cover and cook 5-10 minutes, until soft, then add salt.
